Harvest of the Month – BEANS

Beans are a highly nutritious food source, offering a wealth of essential vitamins, minerals, (such as fiber for a healthy digestive system, protein for strong muscles, and folate for overall health) making them an excellent contribution to a balanced diet. They grow really well in our area so it is easy to buy them locally, promoting sustainability, and supporting our local economy. Additionally, beans possess an impressive shelf life, making them a convenient pantry staple that can be stored for extended periods without compromising their nutritional value. Their versatility in culinary applications, combined with their delightful taste, further enhances their appeal as a wholesome and delicious option for meals.
The heirloom bean blend that we acquired from Humboldt was so beautiful and delicious that for our Pantry demonstrations this month we offered a taste of them by themselves, no other ingredients, but there are many ways to eat beans and many recipes that call for beans can be modified to include a different kind than what it calls for or dried beans, prepared ahead, instead of canned beans. Eatfresh.org has many recipe suggestions for beans.
