BEETS:

The Harvest of the Month for March was Beets. One average sized beet contains about 25% the daily recommended value of folate (also known as B9), which is a nutrient used by the body to help in cell regeneration. That is especially important for pregnant woman and people with some diseases such as anemia which causes red blood cell deficiency.

To celebrate beets, we offered Chocolate Unbeetable Muffins for our pantry participants and roasted beets in the classroom for taste testing. Everyone loved them! They were so good you’d think they can’t be beet, but they are!
