BY DONNA WESTFALL

coffeeAre you like so many others that pour your leftover coffee down the drain and don’t think twice about it?  That’s how is was in our home until just recently.  All of a sudden I looked at the coffee pot, poured the remaining cups of coffee into a measuring cup (2 cups); and decided no more waste.

The first project was a meat recipe.  The recipe called for brisket, which I didn’t have and wasn’t going to run out to the grocery store to buy.  I put a roast (cut up) into a pot; added onions, garlic, parsley, carrots and 2 cups of coffee.  I let it cook for hours (brought it to a boil and then let it simmer) and lo and behold…. it was delicious.

Of course you can pour that leftover coffee into your yard to water your plants.  Or you can look around for other recipes.

Lots of people make ice cubes out of leftover coffee.  Or add that leftover coffee to salad dressing; chili and baked goods.
